From 2000 to 2025, Jallow served in various high-stakes UN field missions. His roles included Civil Affairs Officer with the United Nations Transitional Administration in East Timor (2000–2002) and the United Nations Mission in Sierra Leone (UNAMSIL, 2002–2005), where he worked to rebuild communities in post-conflict settings.

He later served as a Political Affairs Officer with the UN Political Office for Somalia (2005–2008), the United Nations Integrated Peace Building Office in the Central African Republic (BINUCA, 2008–2010), and the United Nations Organization Stabilization Mission in the Democratic Republic of Congo (MONUSCO, 2010–2025).

Jallow also held the position of Special Assistant to the Special Representative of the Secretary-General at the United Nations Office for Central Africa (UNOCA) from 2012 to 2013.

His work in these volatile regions involved protecting civilians, fostering dialogue, and supporting peace building efforts, often at great personal risk.
